Pumpkin Chili
October recipe #8 is pumpkin chili—which may be one of the best things I have ever made! So delicious and quick/easy to make. This is one of the recipes you are going to have to trust me on—sounds odd but is tasty!

Ingredients:
-1 tablespoon of olive oil
-1 pepper (I used yellow and orange mixture) chopped
-1 red onion chopped
-2 tablespoon of minced garlic cloves
-3 cups of chicken broth
-1 can of pumpkin
-1 can of diced tomatoes (do not drain)
-2 teaspoons of chili powder
-1 and ½ teaspoon of ground cumin
-1 and ½ teaspoon of dried oregano
-1/2 teaspoon of salt
-1 teaspoon of paprika
-1 can of black beans (drained)
-1/2 can of kidney beans (drained)
-2 cups of shredded-cooked chicken
Directions:
1. In a 12 quart (or whatever you have is fine) heat the olive oil over medium heat.
2. Add the pepper and onion and cook for about 8 minutes or until tender.
3. Add the garlic and let cook for 2 more minutes.
4. Add the rest of the ingredients and let contents come to a boil.
5. Cook for about 45 minutes.
