Pumpkin Seed-Nut Bread

For whatever reason I am going through a baking bread phase and I absolutely love it! I used to think making bread was such a process, but it turns out many breads are super easy to make and super delicious...just like this bread recipe!  

Pumpkin seeds are a great addition to anyone’s diet, because they contain so many amazing health benefits. I was working with a client recently and one of my recommendations for them was to add pumpkin seeds to their daily diet regimen…which then led me to this recipe. I understand that some people prefer to eat their seeds and nuts in smoothies or breads. As long as you get them in your diet, eat them how you prefer!

Pumpkin seeds have shown to support the heart, the immune system, sleep and more. They are also a great source for healthy fat, which is why they are a great post-work out snack!

I was never a baker and now I can’t stop! Try this recipe and you will see how easy and delicious it is!

Ingredients:

-1 cup pumpkin seeds

-1/2 cup chopped pecans

-1/2 cup chopped walnuts

-1/4 cup sliced almonds

-1 ½ cup almond meal

-1/2 teaspoon baking soda

-1/2 teaspoon salt

-1/4 cup unsweetened coconut flakes

-3 large eggs

-1/3 cup egg whites

-2 tablespoons of honey

-1/3 cup melted coconut oil

-1/4 cup pumpkin puree (organic brand)

Directions:

1. Preheat the oven to 350 degrees.

2. Coat 9x5 loaf pan with coconut oil and then line with parchment paper. Coat the parchment paper with oil too.

3. Using a food processor, grind the pumpkin seeds until they are finely chopped.

4. In a small bowl, add the eggs, egg whites, honey, coconut oil and pumpkin puree. Whisk them together.

5.  In a large bowl, mix the pumpkin seeds, walnuts, pecans, almonds, almond meal, baking soda, salt and coconut flakes together.

6. Add the dry ingredients to the wet ingredients. Stir contents until well mixed.

7. Pour the bread batter into load pan. Make sure to spread the contents evenly.

8. Bake for 45-50 minutes. Use the toothpick test to check when it is done.

9. Remove from oven and pull out parchment paper. Let the bread cool on wire rack.
