Lemon-Sugar Cookies
My Dad LOVES a good cookie. I always wait to see what he thinks of my cookie recipes before putting the recipe on here…I trust the cookie expert : ) Luckily, my Dad expressed to me that these were his FAVORITE cookies. That’s right FAVORITE!
Now he was shocked to find out that these lovely cookies were not only super yummy, but also were gluten free! A lot of people steer clear of gluten-free products, because they tend to taste dry and crumble very easily. But not with these lemon sugar cookies! Adding the correct amount of xanthan gum is key for this cookie recipe.
You can also make these with normal all-purpose flour, just don’t add the xanthan gum.

Ingredients:
· ½ cup of grass-fed butter (softened)
· 1 cup of cane sugar (make sure to have a little more to sprinkle on top of the cookies)
· Zest of 1 lemon
· 2 ½ tablespoons of fresh lemon juice
· 1 egg
· ½ teaspoon of vanilla extract
· 1 teaspoon of baking soda
· ¼ teaspoon of sea salt
· ½ teaspoon of xanthan gum
· 2 cups of all-purpose gluten free flour
Directions:
1. Using stand mixer, cream the butter and sugar. Continue until contents are nice and fluffy.
2. Add in the lemon zest, fresh lemon juice, egg and the vanilla extract.
3. Now add the baking soda, salt, xanthan gum and flour.
*I added1/4 teaspoon of xanthan gum and 1 cup of flour. Then repeated.
4. Transfer the cookie batter to another bowl. Refrigerate overnight or for at least 4 hours.
5. Pre-heat oven to 350 degrees F (I use conventional bake) and oil the baking sheets.
6. Using a cookie scooper (or a spoon) create cookie dough balls and place on baking sheet. Make sure they are at least 2 in. apart.
7. Sprinkle additional sugar on top (if desired).
*I like to press my cookie dough balls down just a smidge.
8. Bake cookies for about 13-14 minutes. Then take out and let the cookies rest for about 5 minutes before transferring to a cookie rack.
