Zucchini Fries

Let’s be honest…zucchini tastes way better fried (or at least in my opinion!) I have never been a huge fan of raw zucchini, but love when it is grilled, baked or sautéed. Growing up my mom and dad always used to experiment with different sauces to try on zucchini and other vegetables. These memories led me to this this recipe and discovering other ways to turn vegetables into a tasty side dish.

This recipe is quick and easy, which is why it has instantly become a favorite of mine. I like the addition of whole wheat bread crumbs, because it gives the zucchini a crunch. When eating this recipe, I found it to be a little bland. I decide to add some homemade salsa to go along with it.

I love eating vegetables, but sometimes I need a little something, something added to it! This recipe is one way to bring some extra flavor to zucchini!

Ingredients:

-olive oil or coconut oil

-3-4 medium sized zucchinis (cut the ends off)

-3 large egg whites

-1/4 teaspoon ground black pepper

-1/4 teaspoon sea salt

-1 cup of bread crumbs (focus on organic and wheat containing crumbs)

-4 tablespoons of pecorino Romano or Italian blend cheese

-1/2 teaspoon garlic powder (I tend to add more because I love garlic!)

Directions:

 -Preheat oven to 425 degrees F and apply oil to baking sheets.

-Cut ends off of whole zucchini 

-Cut the zucchini in half. Then cut the zucchini into sticks 3-4 inches long and ½ inch thick. (I cut the seed portion off the zucchini and used it for a different recipe!)

-Place all the zucchini sticks in a paper towel and blot any excess moisture.

-In a small bowl beat the egg whites, salt and black pepper together.

-In a shallow bowl, mix the cheese, garlic powder and bread crumbs.

-Dip each zucchini stick into the egg white mixture and then the bread crumbs. (Trust me its harder than it looks)

-Place the breaded zucchini sticks on the nonstick baking sheet.

-Bake for 25-27 minutes or until golden brown and are tender in the center (use tooth pick to check).

They may not be french fries or fried Oreos but they are quite the healthy alternative!
