Pumpkin Lentil Soup
Get warm and full with this awesome soup recipe!
Ingredients:
-4 cups of water
-2 cups of chicken broth
-1 and ½ cups of lentils
-1 teaspoon of garlic
-1 tablespoon of cumin
-2 teaspoons of dried oregano
-1 can of black beans (drained and rinsed)
-1 can of pinto beans (drained and rinsed)
-1 can of pumpkin
-1/2 cup of your favorite salsa
-1/2 teaspoon of salt
Directions:
1. In a 6-12 (whatever you have is fine) bring the first 6 ingredients to a boil. Cook lentils under medium heat for 20-30 minutes or until they are tender.
2. Add the rest of the ingredients and bring contents back to a boil. Reduce the heat to simmer and let contents simmer/uncovered for at least 20 minutes.
