Turkey Tostadas with Red Vinegar Slaw
Anyone who knows me—knows that I LOVE Mexican food. To be honest, I have some type of Mexican inspired dish weekly and I add hot sauce to EVERYTHING. This just means, that I am always trying to find different ways to enjoy my favorite type of styled foods.
Whenever I am grocery shopping, I always pass the tostadas and tell myself that one day I am going to stop making my simple taco dish and mix it up a bit. So this week I decided to take on the challenge and make the ultimate tostada dish.
Now whenever I am making something from scratch—I think it is important to make everything from scratch. So I made my own taco seasoning for my ground turkey and it is fabulous! Who needs to by the packet of seasoning when you can make a bomb ass seasoning on your own!
I also decided to make a vegetable slaw to go on top of my tostadas instead of sticking with the simple chopped vegetable mixture I normally do. The vegetable slaw—was a straight game changer! Three simple ingredients added to my favorite toppings turned this standard recipe into a standout recipe!
I am always striving to find ways to make simple dishes fun and tasty. I also like to make sure that there is variety in my dishes, which is why this Turkey tostada with vegetable slaw is a must try! And you most likely have all these ingredients in your fridge already…so go ahead and give it a try!
Ingredient’s for taco seasoning:
-3 tablespoons of paprika
-2 teaspoons of pepper
-2 and 1/4 teaspoons of chili powder
-1 teaspoon of salt
-2 teaspoons of chopped onion
-1 teaspoons of cumin
-dash of cinnamon
-1 teaspoon of cayenne pepper
Ingredient’s for tostadas and slaw:
-1 lb. of ground turkey
-1 can of refried beans
-4 tablespoons of olive oil
-2 and ½ tablespoons of red wine vinegar
-1 teaspoon of dried oregano
-1/2 teaspoon of salt
-1 cup of thinly sliced radishes
-1 chopped avocado
-1 hot pepper
-1 cup of tomatoes
-1 cup of chopped red onion
-tostada shells
Directions for taco seasoning:
1. Combine all the ingredients and set aside.
Directions for slaw:
1. Chop the radishes, tomatoes, onion and hot pepper and combine. Add the olive oil, red wine vinegar, salt and oregano. Stir together and then set aside.
Directions for tostadas:
1. Cook the ground turkey.
2. Warm the refried beans.
3. Put everything on top of the tostada shell…seriously so simply!
