Fun Game Day Meal

 

I decided to be in charge of this years Super-Bowl meal for my family. I was a little nervous about it, because my Dad is used to being in charge of Sunday meals and especially football meals. I was excited to take a swing at it and surprised my family with a healthy rendition of a burger. My family is notorious for playing it simple on Sundays, which normally means grilled burgers, veggies and some type of dip. So I included all these parts in my own Sunday Super-Bowl meal, but provided a healthy twist. The meal I prepared was: Chicken-guacamole burgers, with Succotash and homemade salsa. I am happy to say that it was a huge success and will definitely be something I will be re-creating for my family on Sundays.

These three recipes are awesome together, but also delicious on their own. I would also like to add that each of these recipes are SUPER easy to make and takes very little time. I decided to make the salsa a day earlier, so that the contents could sit for a full 24 hours. I believe that homemade salsa tastes a little better when you let the flavors sit for a little bit. That being said, the salsa could also be eaten right away! Up to you! Let me know what you think of these recipes and if it is something you will include on your Sunday.

Don’t get me wrong, I love regular burgers too! These are a great substitute though!

Tortilla Crusted-Chicken Burgers:

Ingredients:

-2 ½ lbs. ground chicken (lean)

-4 teaspoons chili powder or paprika

-1/2 cup of crushed tortilla chips

-1 avocado (halved, seeded, peeled and mashed)

-1/2 teaspoon salt

-Olive oil 

Directions:

1. Pre-heat oven to 450 degrees F.

2. In a medium bowl, add the chili powder or paprika, salt and ground chicken.

3. With damp hands, form the mixture into 8 patties. The patties should be ½ inch thick.

4. Place the tortilla chips in a bowl or on a plate and coat both sides of the patties into the crushed chips.

5. Coat the baking pan with olive oil and then add the patties.

6. Bake for 20-30 minutes (really depends on how fast your oven gets hot. I advise you to check the internal temperature of the chicken patties. Should be 165 degrees F.)

7. Make sure to flip the patties half way through!

8. Add the mashed guacamole to the top of the patties.  

Succotash:

Ingredients:

-2 cups fresh or frozen corn (thawed)

-1 cup frozen lima beans (thawed)

-2 cups chopped red peppers

-1 cup chopped red onion

-4 garlic cloves minced

-2 teaspoons paprika

-1/2 teaspoon of salt

Directions:

1. Pre-heat oven to 450 degrees F (if doing this with the chicken burgers then they can go in at the same time at the same temperature).

2. In a 15x10 baking pan combine the corn, lima beans, red peppers, onion, garlic, and salt. Drizzle olive oil over the contents and sprinkle over the paprika. Toss or mix the contents together.

3. Place in the oven for approximately 25-30 minutes. Mix the contents halfway through. Take the contents out when the vegetables are tender. 

Tomatillo Salsa:

Ingredients:

-4 husked and finely chopped tomatillos

-3/4 cup finely chopped golden orange or yellow cherry tomatoes

-2/3 cup finely chopped roma tomatoes

-1/4 cup finely chopped red onion

-2 tablespoons of chopped cilantro

-1 seeded and chopped serrano chili pepper

-2 tablespoons of fresh lime juice

-salt

-pepper

Directions:    

1. As shown in the ingredients sections, chop all the contents.

2. Cover the contents with salt and pepper (add as much as you personally like)

3. Add all the contents to a mason jar or bowl.

*I layered the contents so that the different flavors were found through out.

4. Add the lime juice. Stir or shake.

 5.Cover the mason jar or the bowl.  Let salsa sit in the refrigerator for 1-24 hours.
