This recipe is extremely simple and honestly is SUPER tasty! I am obsessed with avocados, but adding an egg and baking them…takes my avocado obsession to a whole new level. Avocados are jammed back with healthy fats and fiber. Avocados are known to support healthy digestion and support the heart! Avocados are nutritionally rich and are honestly one of the healthiest foods to include in your diet. I am always trying to find ways to add an avocado to my weekly diet and this recipe has made it easier for me to do that. This is super quick to make and has very limited prep time. All you have to do is crack and egg into and avocado and bake it….that is literally it! So simple and very tasty!

I say this with all the recipes I post here…but seriously…this recipe is a must try!    

Ingredients:

-2 avocados

-4 large eggs

-salt and pepper to taste

-feta cheese

-green onions

 

Directions:

1. Heat the oven to 425 degrees F.

2. Slice the avocado in half and take on the pit (leave the skin on!)

3. Widen the pit whole a little bit using a spoon. Want to create a larger cavity for the egg.

4. Place avocado into baking dish or cupcake pan (this helps keep the avocado upright).

5. Crack one egg on top of each avocado half.

6. Add salt and pepper for taste.

7. Bake for 15-20 minutes (make sure to keep checking…everyone has the preference on baked eggs. I like mine a little runny, so I baked it for about 16 minutes).

8. Add feta cheese and onions.

*I added a piece of fresh baked wheat bread!
