I love mashed potatoes, but who doesn’t?! If you are a fan like me, then you will love this recipe for mashed cauliflower! It tastes a lot like mashed potatoes, but is lighter and won’t fill you up as quick!

Cauliflower is cruciferous vegetable, which means that is jammed packed with vitamins and minerals. Cauliflower, specifically, has shown to help prevent chronic diseases, decrease inflammation and improve digestion. Simply, it is a great addition to your diet.

To be honest, I am not a fan of eating cauliflower raw—which is why this recipe is perfect for me. I can get the amazing nutrients and healthy benefits of cauliflower, but also eat a tasty dish!

Ingredients:

-1 head of cauliflower

-2 tablespoons of Grass-Fed butter (use if not using soy or almond milk)

-1-4 cup of soy or almond milk (use if not using butter)

-Salt

-Pepper

*I switch between butter and soy/almond milk. If you want a butter flavor to it then stick with butter.

 Directions:

1. Chop 1 head of cauliflower into small pieces.

2. Steam cauliflower until tender (very soft). This should take about 10-15 minutes.

3. Using a hand mixer, mash the cauliflower together.

4. Add 2 tablespoon of butter or 4 cup of soy or almond milk. *Add more to make creamier if necessary.

5. Add salt and pepper for taste.
