French Onion Soup
There are a few things I ALWAYS order when I go out to eat (if it is on the menu)…French Onion soup is one of those items! I just love me some soup! I enjoy comparing the different flavors that restaurants tend to put in theirs!
This recipe has become a staple for me and I tend to make it at least once a month. It is a great Sunday evening meal, which I love to make for family and friends. At first glance, this simple meal may seem time consuming—BUT TRUST ME IT IS WORTH IT.
So grab a glass of wine and the new Taylor Swift album—you are now ready to make this French onion soup!
Ingredients:
-oven safe bowls
-5-6 large yellow onions (chopped into thin slices)
-3 tablespoons of grass fed butter
-4 cloves of garlic (minced)
-3 tablespoons of all-purpose flour
-1/2 cup of white wine
-6 cups of beef broth
-1 teaspoon of store bought Worcestershire sauce or try my homemade version below
-1/4 teaspoon lemon juice
-2 teaspoons of soy sauce
-hot sauce
-1 bay leaf
-3 springs of thyme
-salt and black pepper for taste
-baguette
-Gruyere cheese
Directions for homemade Worcestershire sauce:
· Mix ¼ teaspoon lemon juice, 2 teaspoons soy sauce and 3 dashes of hot sauce.
Directions for Soup:
· Caramelize the onions:
o In a large pot, melt the butter. Then add the onions.
o Sauté the onions on medium-high heat for approximately 30 minutes. You will need to stir the onions every 3-4 minutes to make sure they don’t burn.
o Once the onions have turned slightly brown, add the garlic. Sauté for another 5 minutes.
o Now add the flour and sauté for another minute.
o Add the wine to help deglaze the pan (it gets the brown bits off the bottom).
· Soup Time:
o Add your beef broth, homemade Worcestershire, bay leaf and thyme with the onions.
o Turn the stove to simmer (I let mine sit for at least 4 hours, but you can skip this step if desired).
o Remove the bay leaf and thyme.
o Add salt and pepper.
· Toast up your bread:
o Pre-heat the oven to 400 degrees F.
o Chop half the baguette into small pieces then place on baking sheet.
o Bake the bread until they have golden edges (about 7 minutes).
· Broil Time:
o Make sure you have oven safe bowls for this part!
o Place your bowls on a baking sheet.
o Add the bread to each bowl (covering the bottom).
o Add soup to each.
o Add your cheese (I slice the cheese very thin and lay it across the whole top to cover it).
o Place them in the oven and turn the oven to broil. Keep in the oven until the cheese is melted and bubbly (about 4 minutes).
