Pumpkin-Apple Cinnamon Muffins
You all know how obsessed I am with apple-cinnamon muffins (I have altered my recipe multiple times aka trying to perfect it)…so why wouldn’t I make recipe #7 PUMPKIN-APPLE CiNNAMON MUFFINS! I mean it only seems right that I combo pumpkin with one of my favorite baking recipes.
You will not be disappointed with this recipe…seriously just can’t go wrong with this one! If you love pumpkin, apples or food that tastes good—then these muffins are for you!
A must try and you won’t be disappointed.
Ingredients:
For muffins:
-1 and ½ cup all-purpose flour
-1 cup wheat flour
-2 cups of coconut sugar
-1 tablespoon of pumpkin spice
-1 teaspoon of baking soda
-1/2 teaspoon of salt
-2 eggs (beaten)
-1 canned pumpkin
-1/2 cup of coconut oil
-2 cups of finely chopped apples (I used red)
For topping:
-1/4 cup of coconut sugar
-2 tablespoons of ground cinnamon
-1 tablespoon of butter
Directions:
1. Pre-heat oven to 350 degrees F.
2. Combine the flours, coconut sugar, pumpkin pie spice, baking soda and salt in a large bowl. Mix.
3. In a separate bowl, combine the eggs, pumpkin, and oil.
4. Add wet ingredients into the dry and then stir.
5. Fold in the apples.
6. Pour into muffin tins (greased or lined) (I did 12 large and 10 mini). This makes about 18 full muffins.
7. Bake muffins for 30-35 minutes (check on mini one’s sooner)àuse toothpick test.
