Chocolate Rolled Oat Bars AND Oatmeal Bread Pudding

Two different recipes with the same ingredients-yes please! So this past week I had some time to get myself in the kitchen and get baking! I really do love baking…but I don’t have time to spend hours doing it—which is why these two recipes are perfect! They both take 20-30 minutes.  

So…I first made the chocolate rolled oat bars and they were tasty (I actually ate one, while writing this post). To me they are perfect for a sweet breakfast or as an afternoon treat!

Chocolate Rolled Oat Bars:

Ingredients:

-2 ½ cups of rolled oats

-1 cup of organic all-purpose flour (I like red mill brand)

-1 cup of whole wheat flour

-1 teaspoon of baking soda

-1 cup of coconut sugar

-1/2 teaspoon of salt

-1 cup of coconut oil (melted)

-2 large eggs

-1 tablespoon of vanilla extract

-1 and ½ cups of chocolate chips (whatever type you like)

Directions:

1. In a mixing bowl add the rolled oats, both flours, baking soda, sugar, salt, melted coconut oil (let it cool a little), eggs and vanilla extract.

2. Using a stand mixer combine all the ingredients together.

3. Once combined add 1 cup of the chocolate chips.

4. Add the mixture to a 9x13 (or whatever you have) pan. Make sure to oil it first!

5. Put in the oven (set to 350 degrees F) for 23 minutes.

TADA! Make sure you let it cool for about 30-45 minutes.

NOW you are wondering…how do I make those chocolate oatmeal bread budding bars?! Well look here…it is exactly the same as above…EXPCET you turn the rolled oats into oatmeal! SO SIMPLE MY FRIENDS!

So follow the exact steps above…but first take the 2 and ½ cups of rolled oats and turn it into oatmeal. Let the oatmeal cool a little before adding it to the flour and the follow the same steps as noted above.

 

I was serious when I said you can get two completely different treats with the exact same ingredients! So depending on what mood you in...bake whichever! I made both, because I couldn’t decide and my family loved both!
