Apple-Cinnamon Muffins

Several people asked me for this recipe after I posted it on my Instagram—so I decided to take some time and write up the recipe and share it with you all! I am going to be completely honest-I created this recipe randomly. I looked to see what ingredients I had-and noticed I had a ton of red apples that needed to be eaten…obviously my mind went straight to bakingàwhich then led to my apple-cinnamon muffin recipe. I make muffins regularly, but these babies turned out to be one of my favorites! They are already gone and I already have requests to make them again (that is always a good sign)! These muffins are great for breakfast or as an awesome snack option (try adding peanut butter). They are so easy to make and take very little time.

When baking, I always focus on quality ingredients and looking for healthy alternatives. In this case the heathy alternatives were:

            -organic products

            -better flour products

            -fresh apples

            -coconut sugar

            -alternative buttermilk

Little changes can make all the difference. Take the time and make a healthier choice! You will enjoy these healthy muffins-I can promise you that!

Ingredients for muffins:

-1 and ½ cups of finely chopped red apples (I used gala red apples and kept the peel on)

-1/3 cup olive oil

-1 cup of soy milk (or almond milk)

-2 teaspoons of white wine vinegar

-1 egg

-1/3 of coconut sugar

-1 and ½ teaspoons of vanilla extract

-1 cup of organic all-purpose flour (I use red mill brand)

-1 and ½ cup of whole wheat flour

-1 teaspoon of baking powder

-1 teaspoon of baking soda

-3 pinches of salt

-1/4 teaspoon of all spice

Directions for muffins:

1. Preheat the oven to 350 degrees F.

2. Bring the soy or almond milk to room temperature.

3. Add the white wine vinegar to the milk and let it sit for 3-4 minutes. Then whisk together. This makes an alternative buttermilk.

4. Add the oil, alternative buttermilk, egg, coconut sugar and vanilla extract to a large bowl. Whisk the contents together.

5. Then add the baking soda, baking powder, salt, all spice and both flours to the contents. Whisk together.

6. Fold in the finely chopped apples.

7. Add contents to muffin tins (make sure to grease the pan first).

8. NOW TIME TO ADD THE TOPPING!

Ingredients for topping:

-3 tablespoons of coconut sugar

-2 tablespoons of grass-fed butter

-1 teaspoon of cinnamon

Directions for topping:

1. Melt the butter. Then add the cinnamon and sugar. Now mix.

2. Using a spoon, glaze the top of the muffins (you don’t need a lot!).

3. Add extra cinnamon if desired (I did!)

4. Bake the muffins for 15 minutes (make sure to check with a toothpick and to take out if the tops are golden brown-that means they are done).
