Father's Day Blueberry Scones

A blueberry scone, hot cup of coffee and a good book=pure perfection.

Since it is Father’s Day, I decided to bake something special for my amazing daddio! One of his favorite baked goods is blueberry scones…so it seemed appropriate to surprise him with his favorite treat.  

My Dad used to take me to Starbucks every now and then. He would always get a cappuccino and a blueberry scone. He would always rave about how great their scones were. I decided to then try one myself and of course…I fell in love with blueberry scones too! I mean…a warm blueberry scone, hot cup of coffee and a good book—pure perfection!  

So I decided to take a risk and make my own version of blueberry scones. Scones are a little difficult to make, because if you don’t combine the ingredients correctly or the fruit you use is too watery…they won’t have that flakiness that a scone should. Luckily, I have had practice with making scones and have found that this standard recipe works really well. Keep in mind, if you substitute the blueberries with a watery fruit (like strawberries) it may change the consistency of the scones. So make sure to dry out your fruit first, before adding it to flour mixture.

I am happy to say that these scones turned out amazing! They are not super dry and have just enough flakiness. I encourage you to try this recipe, because you will fall in love with scones just like my dad and I.

Recipe:

Ingredients:

-2 cups of all-purpose flour

-1/2 cup of organic cane sugar

-1/2 teaspoon of salt

-2 and ½ teaspoon of baking powder

-1 teaspoon of ground cinnamon

-1 stick of cold butter (unsalted)

-1 egg

-1 ½ teaspoon salt

-½ cup of buttermilk or heavy cream

-1 cup of fresh blueberries

Directions:

1. Preheat oven to 400 degrees F. Then combine the flour, baking powder, salt and cinnamon.

2. Grate or cut the cold-butter into the flour mixture. Then combine (you want to make sure the flour mixture turns into a  crumble mixture).

3. Put the flour mixture in the refrigerator to chill.

4. In a small bowl, whisk the cream, egg and vanilla.

5. Pour the wet contents into the flour mixture. Then add the blueberries and mix contents together.

6. Pour some flour onto a cutting board. Then pour the dough onto the cutting board and form into a ball.

7. Press the dough ball into an 8 inch disk. Cut dough into 8 in. wedges

8. Line a baking sheet and then place dough wedges on (make sure they are 3 inches apart). Refrigerate for 15 minutes.

9. Bake for 23-25 minutes. Wait until the edges are golden brown.

10. Let cool for 10 minutes then enjoy!
