Apple Cinnamon Coffee Cake

I go through phases where I crave a certain baked goods…this week it is COFFEE CAKE! For all of us our routines and normalcies have drastically changed. One thing I have found that really helps ease my mind and helps me stay in the moment is…baking! Crazy right? But then again we all have different activities to help us be in the moment and just enjoy the task at hand.

When I am baking my whole focus is on creating a delicious and yummy treat! I am super focused, mostly because if I am not I will forget to add something.

Coffee cake is a super easy baked good to make. You really only have three steps and then BAM you have a delicious treat to enjoy at ANY part of the day. With this recipe I have used gluten-free flour and just regular flour. So totally up to your preference or diet.

Ingredients for Cake:

-1 and ½ cup of organic all-purpose flour or gluten free flour (which is what I used)

-1 cup of sugar (cane or brown sugar)

-1 and ½ teaspoons of baking powder

-1 and ½ teaspoons of ground cinnamon

-1/2 teaspoon of salt

-3/4 cup of soy milk

-2 tablespoons of grass-fed butter (melted)

-1 teaspoon of organic vanilla extract

-1 large egg (beaten)

-1 cup of diced granny smith apples

-Oil

 

Ingredients for streusel topping:

-1/4 cup of brown packed sugar (light brown organic preferred)

-2 tablespoons of all-purpose flour

-1/2 teaspoon ground cinnamon

-2 tablespoons of chilled butter cut into small pieces

 

Directions for the batter:

1. Pre-heat oven to 350 degrees F.

2. Combine the flour, sugar, baking powder, cinnamon and salt. Now whisk together.

3. Make a well within the dry ingredients. Now add the milk, melted butter, vanilla and egg to the well.

4. Combine all the ingredients together.

5. Add the diced apples to the batter.

6. Pour the batter in an 8-inch square baking pan (make sure it is coated with cooking spray).

 

 Directions for the topping:

1. Combine the sugar, flour and cinnamon and whisk contents together.

2. Cut in the butter (use two knives to make a coarse  meal).

3. Sprinkle contents over the batter (make sure it is all covered).

Directions for baking:

1. Bake at 350 degrees F for approximately 45 minutes.

2. Check is the coffee cake is done by using the toothpick test.

3. When done, let it cool in the pan for about 10 minutes before eating.
