Gluten-Free Chocolate Chip Cookies

I am always striving to find healthy recipes, but also ones that are gluten-free. Whenever I make gluten-free recipes I do my best to make them taste “not gluten-free.” If you know what I mean...
Sometimes baked good gluten-free recipes come out dry and crumbly, which with some recipes is fine. Personally, I like my cookie texture to have some gooeyness to it, if it doesn’t it reminds me of store bought cookies.
ANYWAY—this gluten free chocolate chip cookie recipe is fabulous, because the cookies are not dry or crumbly! The key is to make sure you buy gluten free flour that has xanthan gum in it already or add it to your flour combination. This is key! This will make the cookies gooey and not dry…basically counter acts the gluten-free aspect (while still being gluten free).

Ingredients:
-1 stick of grass fed butter
-1 tablespoon of milk (whatever type)
-3/4 cup of packed brown sugar
-1/4 cup of cane sugar
-1 large egg
-2 teaspoons of vanilla extract
-1 and 1/3 cup of gluten free powder (with xanthan gum)
-1/4 cup of almond flour
-1 teaspoon of baking soda
-1/2 teaspoon of salt
-1 cup of chocolate chips
Directions:
1. Whisk together the flours, baking soda and salt.
2. In a saucepan, melt the butter over medium heat. Then pour into a glass container and set aside.
3. In a medium bowl, add the butter, milk and sugars. Whisk together. Then add the egg and vanilla. Continue to whisk until the contents appear smooth.
4. Add the dry ingredients to the wet ingredients. Combine.
5. Now add the chocolate chips to the mixture.
6. Cover the bowl and let sit for about 25-30 minutes. Pre-heat the oven to 350 F.
7. Scoop about two tablespoons worth onto baking sheets.
8. Bake for 10-12 minutes or until golden.
