Chocolate Chip Cookies (no butter)
I LOVE this cookie recipe! Not only is it super simple, but it has no butter! I love experimenting with healthy alternatives. For this recipe I decided to switch out the cold butter for some solid coconut oil. Truthfully, I was not sure how they would turn out…BUT they are AMAZING! It is a must try recipe!
Ingredients:
-1/4 cup of solid coconut oil
-1/2 cup of coconut sugar (or cane if you prefer it a little sweeter)
-1 egg yolk
-1 teaspoon of vanilla extract
-1/2 cup of whole wheat flour
-1/4 teaspoon of salt
-1/4 teaspoon of baking powder
-1/4 teaspoon of baking soda
-1/4 cup of semi sweet chocolate chips
Directions:
1. Set the oven to 375 degrees F and spray a cookie sheet.
2. Combine the coconut oil and sugar in a medium bowl. Beat the contents together.
3. Add the egg yolk and vanilla to the bowl. Beat until combined.
4. Add the flour, salt, baking powder, baking soda to the bowl. Beat until combined.
5. Now add the chocolate chips—YUM!
6. Scoop the dough and place on cookie sheet (should make a total of 8 cookies).
7. Flatten the cookies a little bit.
8. Bake for 8-12 minutes. Make sure the edges are golden brown.
9. Let cool for about 3 minutes and then place cookies on wire racks to cool.
