Day 2 of my Halloween/pumpkin themed recipes!

More pumpkin themed recipes coming at ya! Today I made pumpkin-chocolate chip bread and I am not gonna lie…it is delicious and I have had a piece every day. I am not ashamed at all because it is delicious and a healthy dessert alternative!

You all know I love baking, which is why I was eager to try a baking recipe that involved pumpkin. Pumpkin is not sweet at all, so the chocolate chips give this bread the dessert feeling and taste.  It would also taste good without the chocolate chips, but to be honest I was craving chocolate so it was a must for me.

Ingredients:

-2 cups of packed coconut sugar

-2/3 cup of grass-fed butter (softened)

-3 eggs

-2 and ½ cups of gluten free all-purpose flour

-1 and ½ cup or organic canned pumpkin

-1/2 cup of water

-2 teaspoons of baking soda

-1 and ½ teaspoon of ground cinnamon

-1 teaspoon of salt

-1/2 teaspoon of ground cloves

-1 and 3/4 cups of chocolate chips

Directions:

1. Preheat oven to 350 degrees F.

2. In large sized bowl, cream the sugar, butter and eggs (it is okay if it is clumpy).

3.  Add the flour, pumpkin, water, baking soda, cinnamon, salt and cloves to the large bowl. Mix the contents together.

4. Fold in the chocolate chips (I left some on the side so I could add them to the top later).

5. Pour contents into 9/5 in. loaf pan.

6. Bake bread for at least one hour. CHECK WITH TOOTHPICK! (mine took about an hour and 10 minutes, because my oven is having issues).
