White-Chocolate Macadamia Nut Cookies

With all this baking I am doing lately, I should really start to consider changing my page name to “funsizedbaking.” I am seriously IN LOVE with healthy baking! I find it so relaxing and rewarding. I use it as a time to be with myself and my thoughts. It has been a wonderful to take a break from teaching and work and just do something I enjoy.

Not sure where the idea of macadamia nut cookies came from, but they popped in my head and I realized I never made them before! I mean seriously…how have I never made one of the best types of cookies!? Macadamia nuts and white chocolate?! Nothing much better than that!

I decided to make these cookies gluten and dairy free. I don’t eat dairy and I try and limit my gluten intake as much as possible—BUT it was actually one of my clients that gave me the idea of blogging more about gluten-free baking alternatives.

Since so many people are going gluten-free, I have decided to make more recipes geared towards these individuals. The great thing for my friends who don’t want to go gluten free…simply just change out the flour! Simple as that!

Anyway…these cookies are bomb and I encourage you to try them! I made them giant, cause sometimes you just need a giant cookie in your life.

Ingredients:

-1 and1/2 cups of almond flour

-2 cups of all purpose gluten-free flour

-1 teaspoon of baking soda

-1 teaspoon of baking powder

-dash of salt

-1/2 cup of coconut sugar

-2 large eggs

-1/3 cup of soy milk or coconut milk or almond milk

-1/2 cup of coconut oil (melted and let it cool before adding)

-1/2 cup of cashew butter

-1/4 cup of honey or agave

-1/2 cup of chopped macadamia nuts

-1/2 cup white chocolate chips (I added more on top :) )

Directions:

1. Set oven to 350 degrees F.

2. Mix the dry ingredients together in a large bowl.

3. Mix all the wet ingredients together in a medium bowl.

4. Mix the wet ingredients into the dry ingredients.

5. Spray cookie sheets or use parchment paper.

6. Roll dough into cookie balls and add to sheets (or use a cookie scooper).

7. Top the cookies with the white chips (as many as you like!)

8. Use a fork to flatten the cookies a bit.

9. Bake for 10-12 minutes. Make sure the the edges are golden brown before removing.
